Mango. It’s a nutritionally loaded fruit with 100% of the daily need for vitamin C, 35% for vitamin A, 20% of folate, 10% of vitamin B-6 and 8% of vitamin K and potassium. I am big fan, but I’ve not got a good go to recipe that calls for mango; so I do what I often do… throw it in my vitamix with a few other ingredients until I find my favorite combo. This smoothie is super simple and even my 9 month old enjoys the result! (hence the baby jars)
In a blender combine:
1/2-1 cup spinach (or just a handful)
1/2-1 cup water
1/2-1 cup chunks of frozen organic mango (ala Trader Joe’s)
The juice of 1/2 lemon
2 dashes powdered ginger
1 dash turmeric
Yes, yes, yes!!!! I throw in a green banana for resistant starch and we LOVE these! GREAT recipe!
