RECIPE: Italian Chicken Casserole

Who likes Italian food!? Who wants an Easy, Healthy, Tasty supper that doesn’t disappoint?! If you answered “yes” to one or both of these questions, keep reading. If you answered “no”, then, well, I just don’t know what to do with you.

1 large bag of thawed frozen chicken strips (hormone free of course)

1-2 cups chopped mushrooms (I totally cheat and get pre-washed, pre-sliced from Trader Joes)

3-6 ounces of cheese of choice (pictured here is a soft brie-like cheese, but you could just sprinkle mozzarella)

1 -2 jars all natural tomato sauce

1-2 cups spinach (optional, but not really, since greens keep you young, verdant and cancer free!)

1/2 cup chopped onions (optional, but oh so tasty and good for you, so include ’em, mmkay? mmkay.)

basil, salt, pepper and crushed red pepper to taste ( so, a lot!)

pre heat oven to 350

placed thawed chicken strips in oven safe casserole dish

add veggies

pour sauce on top (as much or as little as you please; I use at least one jar)

sprinkle spices on top (as much or as little as you like; I use ~ 1 Tbsp red pepper and basil ~ 1/2 Tbsp salt & pepper)

sprinkle cheese on top (as much or as little as you like; I use enough for thick covering, ~ 1 cup )

cook for 15-20 minutes (until chicken cooked thoroughly, of course)

serves at least 4 but more like 8 depending on how much chowing down your crew does!
