FAVORITE SNACK ALERT: Real popcorn
I’m not talking about the prepackaged, sprayed with chemicals, individually wrapped microwave popcorn, although I’ve eaten my fair share of those! I’m talking about real corn kernels….
you can actually put 2 Tbsp popcorn kernels in a brown paper bag and put it in to the microwave for 1-2 minutes. Yeah, you can and its called Popcorn.
Not too long ago, my mother, bless her heart, brought over 2 small brown paper bags of popcorn kernels. The bags were folded over and stapled at the top. She told me she’d made me microwave popcorn.
I immediately shot the offer down because everybody knows you can’t put metal in the microwave! She explained she’d been doing it for years. I doubted that, as I’d never seen her eat the savory treat. I also recalled that she recently had to replace her microwave. So the bags sat on the counter until I, desperate for a salty snack and out of edamame, decided to give it a try.
I placed the bag cautiously into the microwave, figuring the sparks would fly immediately (like they had when I tried to thaw a frozen nestle crunch as a 12 year old) and I could intervene before the flames really got out of control (like when I once tried to microwave a pop-tart)
I waited.
No sparks, but then a pop….pop….popopopopopopop.
Delicious. And so easy! Looks like Mom knew what she was doing after all! Funny how that happens.
(you can use a stove top: 2 Tbsp oil and ! Tbsp kernels, cover, med-high heat for 2-3 minutes OR try an air popper!)
Sprinkle parmesan cheese, paprika, olive oil+basil or hot sauce on it to spice it up!
~ 100 calories per 3 cups, as much fiber as a cup of brown rice and more antioxidants than a day’s worth of fruits and veggies! What’s not to love?

Yes! Cinnamon, Yum. I’ve not tried tried the erythritol—I see there is a lot of chatter about it.
is that something you like more than stevia?
I’ve never tried stevia so I can’t say. Erythritol is a part of regular sugar but is about 70% as sweet. I really like its texture. I did some research on it and posted the results on my site, if you’re interested. Just search under “erythritol.”
