This is my new favorite simple yummy recipe. It’s so delicious you might faint, but stay prone as long as you like, because you’ll save loads of time making it!
You’ll need:
1 bag of frozen shelled edamame
2 Portobello mushrooms, sliced
1 sleeve of soba noodles (don’t fret, most international aisles at the grocery store have these; 3 sleeves per package)
1/3 cup lite soy sauce
1/4 cup sesame oil (or high quality peanut oil)
2 tbsp of spicy mustard
dash of agave, honey or sugar (optional)

Saute sliced mushrooms in a splash of soy sauce, oil and/or water until dark brown and tender
boil edamame x 5-7 minutes
boil soba noodles separately x 5-7 minutes
strain noodles and edamame and mix together
add mushrooms
add the oil, soy sauce, mustard, agave and stir (adjust these ingredients to suit your taste)
